Honey-Dijon Chicken


Honey-Dijon Chicken is one of my favorite dinners, it is never dry and it has a wonderful flavor. I actually follow this recipe exactly and it always turns out delicious. It is a very simple recipe and there really isn't all that much about it that needs explained.

Last Week, This Week

Last week, I only made Chicken & dumplings and Spaghetti. Every other night we ate fast food. I was too sick to cook, so the next worst thing I guess. The Chicken and dumplings were fabulous. It made a huge amount and we froze some to eat in a few weeks. I'll let everyone know how it re-heats. The recipe I used is by Paula Deen and it's simple and de-lish! I added carrots and I didn't use a whole chicken because they were too big, I used a package of chicken breast and a pack of drum sticks so I had some dark meat. The dumpling were extremely easy to make, but they are the tougher dumplings not the fluffy kind. Still they were good.
This weeks menu is going to slightly mimic last weeks because I still have the ingredients for the meals I didn't make. Hopefully I'll be more successful this week.

This week's menu

We just got done making our menu for this week, and I think it's obvious I am in the mood for comfort food. It is the middle of winter after all... Anyway, comfort food seems to be synonymous with high calorie, so I tired to work on that in order to fit in with our diets. Also I didn't mention it in the previous post, but when I make our menu I try to consider budget, because we are definitely on one of those, so I often will past over some recipes in favor of recipes that contain things I already have at home. So without further ado...

New Blog! Mission Statement

I decided to start this blog, as a way of organizing what we have for dinner; what we like and don't like, in order to make menu planning easier. I also thought, maybe it would help others plan "What's for Dinner"! I also will occasionally do restaurant reviews for places in Muncie and the Indianapolis area. Hopefully the majority of the food and recipes I post will be healthy, because like everyone else we have our New Year resolutions. Every day I hope to post what we had for dinner, any recipes, my review and my husbands reactions and also a photo of our dinner.
